A very simple one pot meal without many ingredients is this pulao. We usually make this for office lunch whenever we feel bored eating chapatti and sabji.
It’s mildly flavored rice so serve it with some yogurt raita and pickle.
Ingredients –
1 ½ cup long grained basmati rice,
4 big ripe tomatoes,
2 big onions cut vertically.
1 cup frozen or fresh peas,
10 garlic flakes,
1 ½ inch ginger,
Green chilies (as per your taste),
10 to 15 mint leaves,
1 tsp sahi jeera,
3 bay leaves,
2 pieces cinnamon sticks,
6 cloves,
8 peppercorns,
4 cardamoms,
1 tsp garam masala,
Salt to taste,
6 tsp oil
Method –
Boil tomatoes in sufficient water. When cooled, peel them and make a fine puree. The puree should be 3 cups. It its less then add water to it to make it 3 cups.
Make a paste of ginger, garlic, mint leaves and green chilies. Keep aside.
Wash and drain rice.
Heat oil in a heavy bottomed pan. Put all whole masalas and fry for ½ a minute. Now add onions and fry till light brown.
Next add ginger garlic, mint leaves and green chilies paste and fry till brown. On another gas keep the tomato puree to boil.
Now mix the rice and peas in the fried onions. Lightly stir the rice for 4 to 5 minutes. Take care not to break the grain.
Add boiled tomato puree to the rice. Add salt and garam masala. Cover the pan. Reduce the flame completely once it starts to boil.
Keep the pan with the lid on a hot iron tawa. Keep it on aver slow flame till all water dries up. Serve hot with raita.
